What do you do when you want to infuse a recipe with strawberry flavor, but it so finnicky that adding extra liquid to the mix will render it pied-less. You have several options, go the Special K way like fellow foodie, Jenn @ defunktgourmet, buy some freeze dried strawberry powder from these guys or make your own. How hard can it be to make your own freeze dried strawberry powder, right ?
Run the strawberries through an oven and blend, slow baking in the oven and then freezing will do the trick.

1 lb of of strawberries

Preheat oven to the lowest setting you can set it at, mine was 150°F. Slice the strawberries into thin slices. An extra sharp knife would be great,but be careful with it. I have 9 stitches on right index finger that reminds me of this every time in the kitchen. Place the strawberry slices onto a parchment lines baking sheet and bake in the oven for 2-3 hrs or until dry.It all depends on your oven temperature. Take the strawberry slices out of the oven and place in the freezer for 10 minutes. When I tried grinding the slices in the coffee grinder without freezing, the grinder was complaining loudly. This trick helps freeze the little remaining moisture in the strawberry slices. Put the powder in air tight container and use at your convenience.

    brilliant!!! I can't believe you made dried strawberries at home!! btw, how did your macarons turn out? They look so cute pre-baked. :)
    I'm going berry picking tomorrow so if I have extras (which I'm sure I will), I'll be sure to give this a try. amazing!

    Yes I did. I didn't feel like paying for a next day air and the i wasn't sure about the yield I would get from the Special K. The macarons turned out alright. I got feet :D :D !! Though they were slight burnt. Let men know how it turns outs and happy pickings !!

    Do you think the nutrional value of the strawberries holds throught this process of drying them out. Or could you Dehydrate them and then blend them up

      Hi Mollie,
      From what I’ve read, the low oven temperature drying shouldn’t affect the nutritional value too much as strawberries are made up of mostly water. However if you have a desiccator or dehydrator, I saw use that and freeze them a just before you pulverize them in the blender to reduce clumping. Hope that helped.
